Prep Time: 10 Minutes
Equipment needed:  1 Mixing Bowl, Chopping Knife, Chopping Board, Bowl for serving.

Serves: 2 – or great as a side salad dish



2 x 400g cans of mixed beans , rinsed and drained

1 Avocado

1 Grated Carrot

Handful of coriander

1 Tbsp of Paprika

1 Diced Tomato

2 Green Onions (finely chopped)


1 Tbsp of Olive Oil

Juice of 1/4 of a Lemon

4 Tbsp of Balsamic Vinegar

2 Tbsp of Red Wine Vinegar

50 ml Desiccated Coconut



1. Add carrot, avocado, coriander, tomato, paprika and green onions into a bowl.

2. In another bowl, stir all of the dressing ingredients together until it is well combined.

3. Then add the dressing to the other bowl and stir well. Enjoy!

Salad best served chilled straight from the fridge.
